Today is March 14 (3/14), known to my daughter's math class as "Pi Day." They are celebrating with, what else, pie! I thought we should too!
Here is my favorite pie recipe, Chocolate Pecan Pie. What's yours?
Enjoy!
Chocolate Pecan Pie
Partially baked pie crust (about 10 minutes, use beans or weights for first several minutes so it doesn’t shrink)
2 ounces (2 squares) unsweetened chocolate
½ stick butter
4 large eggs
1 cup sugar
1 ¼ cup dark corn syrup
1 teaspoon vanilla
2 tablespoons rum (or brandy or nothing)
7 ounces (2 cups) pecan halves
Preheat oven to 350. Melt chocolate and butter in a double boiler over hot water and let cool a bit, but not too much. In large bowl, beat eggs, then beat in syrup and sugar. Add vanilla, rum, and melted chocolate/butter mixture and mix. Stir in pecans. Pour into crust. If the rim is not high enough do not use all the filing (make a tiny pie without crust for tastes).
Bake for 40 to 50 minutes. The top should still be soft to the touch and the middle should wiggle a bit.
Remove from oven and cool to room temp or eat slightly warm. Serve with whipped cream.
