Today’s breakfast comes from Hawaii! Our intrepid travel reporter is currently in Hawaii, which inspired me to search for Hawaiian breakfast recipes.
Most people know about spam musubi and pulled pork, but here are some quick and easy breakfast recipes you might not have already known.
First, a Hawaiian take on oatmeal:
Ingredients
- 2 cups old fashioned oats
- 3 cups water
- 1/2 teaspoon kosher salt
- 1/3 cup sliced almonds or chopped pecans
- 1/2 cup pineapple tidbits
Topping Ingredients
- 3 - 4 teaspoons light brown sugar optional
- 1/4 cup pineapple tidbits
- 1/4 cup sweetened coconut plain or toasted
- 2 tablespoons sliced almonds or chopped pecans
Instructions
-
Combine the oats, water, salt, nuts, and pineapple in a medium-size saucepan over medium-high heat. Bring to a boil and then reduce to a simmer. Simmer for 3-5 minutes, until the oatmeal thickens. Scoop into serving bowls, sprinkle with sugar, and toppings as desired. Enjoy!
If you’re looking for something more substantial, this Hawaiian fried rice looks like it will hit the spot!
- In a large skillet over medium heat, fry the bacon until crispy. Remove and chop up the bacon into bite size pieces; set aside and discard all but 1 tablespoon of the bacon drippings from the pan.
- In the same pan, add the red onion, white ends only of the green onions, garlic and red bell pepper pieces. Sauté until the onions are translucent and the peppers are tender crisp, about 5-7 minutes.
- While the vegetables are cooking, whisk together the soy sauce, brown sugar, oyster sauce, honey, ginger, garlic powder, pepper and pineapple juice.
- Add the rice to the pan, along with the bacon, ham, sausage, pineapple, rest of the green onions and soy sauce mixture. Stir well. Serve on a platter and add your favorite style of eggs to the top, if desired.
Hawaiian Breakfast Fried Rice
If you like eating French toast, now you can also eat it Hawaiian style!
-
Slice bread crosswise so that each slice is about 1-inch thick. Cut larger slices into halves or thirds, if desired. Set aside.
-
In a shallow mixing bowl, whisk together the eggs, milk, vanilla and cinnamon. Mix occasionally to ensure it's well-blended.
-
Quickly dip slices (do not soak) in egg mixture and cook in frying pan until golden brown on both sides.
-
Sprinkle with powdered sugar and serve with warm coconut or maple syrup.
Tuna poke is a healthy, delicious way to start the morning. I would imagine you could also use salmon or other fish if desired.
Ingredients
- 1kg (2 1/4 lb) fresh tuna steaks, cubed
- 225ml (8 fl oz) soy sauce
- 10 tablespoons chopped spring onions
- 2 tablespoons sesame oil
- 1 tablespoon toasted sesame seeds
- 1 tablespoon dried crushed chilli flakes (optional)
- 2 tablespoons finely chopped macadamia nuts
In a medium size non-reactive bowl, combine tuna, soy sauce, spring onions, sesame oil, sesame seeds, crushed chillies and macadamia nuts; mix well. Refrigerate at least 2 hours before serving.
That’s all for today; enjoy your Sunday!
